You've heard Jim Salmon & John Welch talk about Big Ash on the Home Repair Clinic many, many times. They, also, hire Big Ash to install or clean the fireplaces/stoves that they have. Jim's new favorite Cowboy Butter Recipe

Cowboy Butter is a flavored butter that can be used as a dipping sauce or formed into a log to use as a spread.

Prep time is only 5 minutes!

Serving 10 tablespoons, calories 94kcal

Ingredients

1/2 cup ( 1 stick/113g) unsalted butter, softened

1 tablespoon coarse Dijon Mustard

1 tablespoon fresh chives, chopped

1 tablespoon fresh parsley, chopped

2 teaspoons fresh thyme

2 teaspoons garlic, minced

1 teaspoon lemon juice

1/2 teaspoon paprika

1/4 teaspoon kosher salt

1/8 teaspoon pepper

1/8 teaspoon cayenne pepper

1/8 teaspoon crushed red pepper flakes

Instructions

1. in a medium bowl, add the softened butter, Dijon mustard, chives, parsley, thyme, garlic, lemon juice, paprika, salt, pepper, cayenne, and red pepper flakes. Mix together until combined. This will make about 2/3 cup of butter. ( you can also mix in a food processor. )

2. To make a compound butter: Scoop the cowboy butter onto a piece of plastic wrap. Roll the butter into a log shape, pressing and shaping as you go until the butter is completely wrapped in plastic. Twist the ends of the wrap together, then refrigerate until firm. - 2 hours or overnight.

3. To make a butter dip: melt the mixture in the microwave in 20 second increments, stirring in between, until fully melted.

4. Store in the refrigerator in an airtight container for up to 5 days.

Ok, so we're back to Jim's woodshop! He, of course, hired The Metal Roof Outlet to cover the shop. Jim has used them for all the other buildings he has, so it was a no-brainer to get the best metal roof company - The Metal Roof Outlet to continue his project! They were done in less than 2 days and it looks fantastic. Their installers are so experienced even though this was a pretty basic roof (to them) they have done giant houses with all kinds of peaks and have installed them perfectly.

I think they enjoyed doing this one to take them back to their early days! They put as much attention in this 'simple' job as they would a much more detailed one. Each one is important to be installed correctly.

About a week ago, John got a call over the weekend from Generator SuperCenter that said his generator exercise had a fault code. He had no idea about it, they told him what it was - nothing serious- but they were going to send a tech right over. John said, hey, no rush, I'm good, I'm smart I can restart it manually if needed. John told them there are more people in need, someone on oxygen, etc. that could use the service tech more than him. So they scheduled for Monday and repaired the simple problem.
